I saw a recipe for soft serve coconut lime ice cream and really wanted to make it for breakfast yesterday. So I added some ingredients to make it qualify as healthy and created my first “smoothie bowl”. For months I’ve been looking at stunning photos of colourful smoothiebowls on Pinterest and various other blogs while in class, and now I’ve finally made one myself. And by the way, I do realize that I’ve only posted recipes for breakfast yet, but after all it’s the most important meal of the day. Hope you enjoy the recipe and I’ll write again soon!
Ingredients: 1 portion
1 frozen banana (in 4-5 chunks)
1/3 avocado
juice from 1/2 lime
1/3 cup light coconut milk
1/3 creamy oat milk (or more coconut)
1 handful of spinach leaves
toppings: chopped pistachios, granola, blueberries, chia seeds, hempseeds
Method:
- Mix the banana and coconut milk in the blender. If it won’t blend, add some more liquid.
- Add teh rest of the ingredients except for the toppings.
- Pour the smoothie into a bowl and add the toppings. Or any toppings you’d like. Enjoy!
