We arrived back home from Kragerø yesterday, and I discovered we still had those two bananas – those two bananas which were not green enough for me on Friday and certainly not today. I thought to myself; what does one do with spotty bananas? And I concluded that the best (and easiest) thing to do was make banana pancakes. I must admit, they turned out quite well and I had a great time photographing them as well:) This recipe requires only four ingredients and then I like to add spices and toppings, but that’s really up to you. Get ready!
Ingredients:
2 small ripe bananas or 1 large ripe banana
1 dL oat flour (you can also just grind oats in your food processor or blender first)
3+ dL plant based milk (I used oat)
2 tsp chia seeds
a small drizzle of vanilla
a big drizzle of cinnamon
toppings: nut butter (almond, peanut, etc.), berries, whatever you like to have on your pancakes
Method: see pictures below for comfort and moral support
- Mix all the ingredients in a blender until they form an even batter with no banana lumps.
- Heat a pan to medium-high heat with some vegan butter (or oil) and start with one little test-pancake. This implies that you cook one pancake first to make sure the batter has a decent consistency. These do take a bit more time to cook than regular pancakes, so you should turn the heat down as the pan starts to get quite hot. I cooked most of mine at medium-low heat.
- Uhm..cook the rest of the pancakes? Make sure they’re not too large as they might just fall apart. Like the rest of your life right now. Sorry, I’m joking – we have exams at school next week.
- Line them up on a plate all fancy like I did or stack them on top of each other. The latter option is often what one finds on Pinterest or Instagram, but I find this leaves too little surface area to cover in nut butter and berries.
