Avocado Toast Three Ways

So yeah, you’ve probably tried avocado toast. Avocados are awesome and the toast condiment pairing opportunities are endless. However, I do doubt that you’ve tried all three of these.. and that’s a shame, ’cause they’re absolutely delicious. Luckily for you, I’m showing you how to make them in this recipe, so you can have just as awesome avocado toast as I have! Really, this’ll take your avocado toast game to the next level. Let’s do this!

Ingredients for all three:

2 large slices sourdough bread (Grovt Surdeigsbrød from Åpent Bakeri/United Bakeries in Oslo is my fave;)

1 medium/large avocado

Option 1: red pesto, bell pepper and arugula

Vegan red (sun dried tomato) pesto – I buy the Helios one – it’s super flavourful and just a tad spicy;)

8-10 slices of red bell pepper (see pictures if wondering how they should look)

a handful of arugula (or other preffered greens)

a sprinkle of salt and pepper – or go crazy and use lemon pepper (it works really well)

Option 2: Dijon mustard, radishes and sprouts

Dijon mustard – as much as you want. I usually just go with a super thin layer as it has a quite strong flavour, usually about 1 tsp per slice

2-4 small radishes (or if you’re so lucky as to have watermelon radishes available, I’d use them instead), thinly sliced

two small handfuls of sprouts (alfalfa, broccoli or radish sprouts work well:), but use whatever you prefer)

a sprinkle of black sesame seeds (optional, just for garnish)

a sprinkle of salt and pepper

Option three: cream cheese (vegan ofc), tomatoes and lemon

Enough cream cheese to provide a thin layer on top of the bread – 1-2 tsp per slice? – I use Oatly Påmackan Naturell (the blue one)

3-4 cherry tomatoes, halved

a generous squeeze of fresh lemon juice

a solid sprinkle of lemon pepper

arugula or other preferred greens (optional)

Method:

  1. Assuming you’ve already sliced, washed and done the other necessary preparations for the toppings before we begin (you have right? Right?), let’s toast some bread. Unless it’s completely fresh, then I’d just skip the toasting. Spread your chosen sauce onto the two slices – red pesto, mustard or cream cheese.
  2. For option 1 (my favourite): slice 1/2 avocado in thin slices and spread across the two slices of toast. Add the slices of pepper in between. Finish with a sprinkle of salt and pepper and a squeeze of lemon juice if you’d like. Top with arugula.
  3. Option 2 (this is my Mom’s favourite): mash the avocado in a small bowl with a fork and spread across the two slices over the mustard. Put the radish slices neatly on top and dump the sprouts on top. Sprinkle with black sesame seeds if using, salt and pepper.
  4. Option 3: Mash the avocado in a bowl with a fork or chop the avocado into small cubes (see pictures below) and cover the cream cheese with it. Place the halved tomatoes across the slices and add a generous squeeze of lemon juice on top. Sprinkle with lemon pepper and top with arugula/greens if using.
